Zucchini is a winter vegetable very appreciated and consumed worldwide due to its nutritional properties. Spain is, worldwide, the fifth exporter of this vegetable, being the Region of Murcia one of the best areas for its cultivation, thanks to the characteristics of its fields, good climate, and the care of its farmers.
The component that defines zucchini is water, followed by carbohydrates, containing very low levels of fats and proteins. Due to these particularities, and together with its fiber content, it is an ideal food for people with overweight problems.
It contains vitamins C, B and A, as well as minerals such as magnesium, sodium, iodine, iron, calcium and potassium. These substances help the body in the manufacture of red and white blood cells, and in the formation of antibodies of the immune system. They also have antioxidant action, regulate the water levels of the cells, as well as improve intestinal and digestive function.
Bell pepper has a great antioxidant power, is low in calories (19 kcal/100 g) and is also very rich in fiber, the latter being very useful in weight control diets.
